Tuna Cakes with Garlic Infused Aioli

Ingredients
Tuna Cake Batter
  • 1 egg
  • 2tablespoons mayonnaise
  • 1/4 lemon, juiced
  • 24 ounce cans tuna fish, drained
  • 1/4cup almond flour
  • 1/2teaspoon salt
  • 1/4teaspoon black pepper, ground
  • 1pinch cayanne pepper(optional)
  • 2tablespoons butter
  • 2 lemon wedges
Breading
  • 1/4cup almond flour
  • 1/2teaspoon salt
  • 1/4teaspoon black pepper, ground
Garlic Infused Aioli
  • 1tablespoon mayonnaise
  • 1/8 lemon, juiced
  • 3drops garlic infused olive oil
  • 1/8teaspoon parsley, dried
  • 1pinch salt
  • 1pinch black pepper, ground
Instructions
  1. In a medium bowl, whisk together the egg, mayonnaise, and lemon juice.
  2. Add tuna fish and mash with a fork until well-combined.
  3. Mix in almond flour, salt, black pepper, and optional cayenne pepper.
  4. For the breading, pour almond flour onto a large plate or into a shallow container. If FODMAPs are not a concern, you can use more almond flour for a thicker coating.
  5. Toss almond flour with salt and pepper.
  6. Separate tuna mixture into four evenly-sized balls.
  7. Heat a large pan over medium heat.
  8. Roll tuna balls in the breading. Make sure to coat the entire outside of each ball with the breading.
  9. Add butter to the heated pan and place the tuna balls in the pan.
  10. Use a fork to press the balls into a “cake” shape. Be careful not to scratch your nonstick pan!
  11. Cook for 6-8 minutes per side, or until the tuna cakes are browned on both sides.
  12. If making aioli, whisk together ingredients in a small bowl and drizzle on top of the tuna cakes. Serve with a lemon wedge.
