Oven Baked Salmon

A simple way to make oven baked salmon with crispy skin! Perfect for dinner or served over a salad.

My approach to cooking is this: simple is almost always better. Sure, I want to pull out all the stops and make elaborate meals that take hours to prepare once in a while. But when it comes to my go-to meals during the week, I like to keep things as easy as possible and I have a hunch that most of you will agree with this.

For me, baking is a really easy way to make a delicious meal with minimal seasoning. If you’ve seen some of my other recipes, then you will know that I like to bake chicken and I like to bake fish. I use my oven for other proteins too and will showcase those in future recipes. There is just something so freeing about setting the oven timer and walking away (but not too far!).

Full disclosure, this oven baked salmon is not as good as salmon that’s made on a charcoal grill. You just can’t beat that. But seeing as I live in an apartment and it’s 40 degrees outside, oven baked salmon is my best option.

Now you’re obviously not going to just eat the salmon by itself. Or maybe you will? I won’t judge. To make a complete meal, I recommend roasting vegetables and sautéing green beans to have on the side. I usually roast salmon for dinner and then save enough so we can have it for lunch the next day. I make a big salad with spring mix, olive oil, thyme, lemon juice, toasted walnuts, salt and pepper.

  • 1-2 pounds salmon, with skin
  • 1/2 tablespoon olive oil
  • lemon wedges for garnish
  • salt and pepper

Instructions
  1. Preheat oven to 425°F.
  2. Line a metal baking sheet with parchment paper.
  3. Place salmon skin side up on the parchment paper.
  4. Rub half of the olive oil on the salmon skin and half on the other side.
  5. Make sure the salmon is skin side down before placing the pan in the oven.
  6. Bake at 425°F for 20-25 minutes, or until a thermometer reads 145°F when placed into the thickest part of the fish.
  7. Serve with salt, pepper, and lemon wedges as a garnish.
